Thomas - Don't know about deburring edges with this. We've tried pulling the edge through all sorts of materials and contraptions in order to remove burr but with limited success. Most of these methods seem to have removed the burr but usually at significant loss to final sharpness. Just seems to us that burrs don't like to be ripped off of edges.

Yeah, each of the meat plant operators has a similar wall-mounted "flicker" as they call them.
In real production they use them not as much for steeling, as for offloading fat deposits from their knives; when they feel the need to steel the blade, they use the steeling rod sitting in their belt knife holder.
The way these spring-loaded devices "steel" the edge is neither in line with recommendations on steeling by Verhoeven, nor the steeling technique the meat operators are tought by their trainiers.
