Edge Straightening Tools - Mike Brubacher - 06-14-2018

Here's a question for KG and anyone else who might want to kick in. I watched a video recently of this product being used in a meat processing facility.

Is this the sort of edge straightening tool used in Australian plants KG? This one happens to be made by ERGO. If you're familiar with this or similar tools would be interested in hearing what you know.

These little gadgets must be one of the fastest growing type of edge maintenance tools. There were several different varieties at Blade last year, which really surprised me. I mean after I checked one out, I couldn't believe there were more.

They appear very simple to operate, which is why they are popular. You can probably see that it would be pretty difficult to actually hit the correct angle for the edge of your blade though. It's very natural to draw your blade too deeply, so the wires ride against the shoulder of the primary bevel. Even the guy who demonstrated it for me did exactly that.

These only allow extremely light pressure of the silly little wires against the blade, so I would be pretty surprised if you could actually accomplish anything compared to what you could do with any sort of steel or ceramic rod.

Just the latest fad IMHO.

Wien I see this tool, picture above, I think that this can be a way to go to remove burr with a simple tool.

I remove burr the old way, bending it in different directions untill it fall off. I often use a steel rod, or a brass rod to do it. When I am outdoors I use a piece of wood.

Think the tool above with only one piece of steel on one side. Deburring are done by turning the tool 180 degrees between every time the burr have been moved on one side.

I think it can be a market for a dunctional and simple burr removing tool.

Thanks guys. Apparently KG is taking time off. It seems that he mentioned some sort of spring loaded device being used in the Australian meat packing plants to straighten edges and we wondered if this might be it. I think that we might just have to give this a try and see what it does. 

Thomas - Don't know about deburring edges with this. We've tried pulling the edge through all sorts of materials and contraptions in order to remove burr but with limited success. Most of these methods seem to have removed the burr but usually at significant loss to final sharpness. Just seems to us that burrs don't like to be ripped off of edges.

Yeah, each of the meat plant operators has a similar wall-mounted "flicker" as they call them.
In real production they use them not as much for steeling, as for offloading fat deposits from their knives; when they feel the need to steel the blade, they use the steeling rod sitting in their belt knife holder.
The way these spring-loaded devices "steel" the edge is neither in line with recommendations on steeling by Verhoeven, nor the steeling technique the meat operators are tought by their trainiers.
